I know I can save the leftovers, but if I'm trying it for the first time, I don't really want to toss out 3-5 meals if I don't like it.Where can I find simple recipes for one?

this site is so amazing. most of the recipes are made for higher quantities, but all you do is type in the amount of servings you want and click a button, and it generates the smaller recipe for you! it's also so easy to find recipes that are awesome, and that suck, and also healthier recipes, faster recipes, and recipes for any occasion! you can easily save the recipes you like by simply clicking the ';save to recipe box'; button on the right side of the page, and then if your crazy like me and have hundreds of recipes, you can sort them by category, meal, subcategory, etc. i swear by this site. i'm on it almost 24/7 now... it's quite pathetic.
for your first recipe search, i recommend typing what you want (ex. enchiladas) into the search engine, and then click on the rating button right under the search bar, and it categorizes the recipes, as rated by people who have used them!
My favorite recipe from this site is probably the crustless spinach quiche! it's really easy, healthy, and makes good left overs.

CHICKEN DINNER FOR SINGLE COOK
1 chicken breast
1 pkg. or can undiluted cream of mushroom soup
1/2 c. water
1 tbsp. lemon juice
2 tbsp. sliced mushrooms
Dash of salt
Dash of sage
Wrap chicken in heavy duty foil. Combine soup, water, juice and mushrooms, sage and salt. Pour over chicken in center of foil. Bring 4 corners of foil together and fold and bring under chicken. Bake at 375 degrees for 45 minutes.
SUPER SUPPER FOR A SINGLE CHICKEN
WALDORF SALAD
2-4 tbsp. mayonnaise
1 tsp. sugar
1/2 tsp. lemon juice
1 apple
1/2 c. diced cooked chicken
1/2 c. diced celery
1/4 c. Baker's angel flake coconut, toasted
1 sm. carrot, cut in thin strips
Combine mayonnaise, sugar and lemon juice in bowl. Cut half the apple in slices; set aside. Dice remaining apples. Stir in diced apple, the chicken, celery and 3 tablespoons of the coconut into the mayonnaise mixture. Serve on crisp spinach leaves or other salad greens with carrot sticks and reserved apple slices. Makes 1 1/2 cups or 1 entire serving.

All those places have really easy recipes on them and can very easily be made for 1 or 2, i try to make enough for two always because then you can freeze the leftovers and then easily have neough for 1 the next time. That makes it really simple. Or on a saturday or sunday just make a big meal and then use those cheap tupperware things like from walmart and then portian them. Do that like every weekend for a month and you will have meals all month long.
what kind of things do you like? I don't know of any website, but, if you have shredded chicken or meet, then they are the types that can easily be tender fast, toss them with your favorite type of vegetable with olive oil and some tomato sauce or soy sauce and have some rice on the side, or if rice takes too long to cook, your could have pasta instead! Or your could put a piece of fish fillet in the oven and have it with some salad on the side :) when you buy the meet put them in portions for one meal in the freezer and take them out one by one as you need them, you could also opt for making lasagna from fresh ingredients and then freezing it in portions, then having it every other day or every two days :) good luck and I hope you find the person you deserve and have a happy life :)
