Simple Recipes?

I am a full-time working mom with a 5 mo. old. I need some quick recipes that are healthy and filling. If possible, for 2.Simple Recipes?
**************HEARTY HOT DISH





2 lbs. ground beef


1 good sized onion, minced


2 eggs


3 stalks celery, diced


1/2 c. water


1/2 c. butter


1/4 tsp. salt (optional)


1 tsp. pepper


American or Mozzarella cheese


1 box chicken or pork


Stove Top dressing mix


2 cans cream of chicken soup


Mix hamburger, onion, eggs, celery, water, butter, salt, and pepper. Spread in bottom of 9 x 13 inch pan. Spread thin layer of sliced or grated cheese over meat. Then slice thin layer of raw potatoes (I precook mine for 10 minutes). Prepare dressing according to directions and spread on top of potatoes. Pour the soup evenly over entire mixture. Bake 1 hour at 350 degrees, uncovered. Serves 8 to 10.





*********CHICKEN CACCIATORE WITH NOODLES


1/4 c. oil


1 - 3 lb. chicken, cut up


2 pt. jars Spaghetti sauce


1 tsp. pepper


1 clove minced garlic


12 oz. pkg. noodles


Parmesan cheese


Grated cheese


Heat oil in skillet. Brown chicken on all sides. Combine salt, pepper, sauce and garlic; pour over chicken. Simmer covered 25 minutes or until tender. About 10 minutes before chicken is done, cook noodles according to package. Drain. Arrange chicken on noodles. Sprinkle cheese over all. Serves 4 to 6.





********QUICK AND EASY CHICKEN ALFREDO


2 chicken breast sliced


2 jars Alfredo sauce


2 c. mushrooms


1 lb. fettuccine or any pasta


2 tsp. butter


Saut茅 chicken and mushrooms in butter until lightly brown. Pour in Alfredo sauce over chicken and let simmer for about 5-7 minutes. Pour mixture over cooked fettuccine or pasta. Sprinkle with Parmesan cheese.Simple Recipes?
I have a few but I warn you this will be long. It's worth it though because you don't need any fancy ingredients! Most of these were fancier and I just modified them to fit my schedule. I don't have time to be Martha Stewart! ;)

Here is another one that you might like. It's really easy and delicious!





Tortilla soup (you can add chicken to make it more of a meal) (I usually just buy the cooked chicken and add it)


Ingredients:


1 onion


4 garlic cloves


half of a chipotle chile (seeded) If you like spicy you can use more but half is more then enough. You can buy these in a can


1 can of Chicken broth or vegetable broth


Cilantro 1/4 cup


tortilla strips you can bake them or buy them premade.


1 can corn (optional)


1 tbsp olive oil


Avocado slices


Lemons


tortillas cut into strips (you can bake them or fry them or just buy them at the store)


Method:


In a blender, mix the onion, garlic and chipotle chile


then put oil in a deep pot and add the onion, garlic, chile mixture. cook for about 3 minutes


Then add the broth. If you don't have enough you can add water. Let this mixture simmer for about 20 min. Make sure it boils and stir it once in a while. Add salt to taste. If you are going to add the chicken or the corn, now is the time to add it.


Once you have poured the soup into bowls, add some chopped cilantro, tortilla strips and top with avocado slices. Individuals can add lemon to their own tasting.





Meatball soup (Albondigas in Spanish)


Ingredients:


ground turkey


white rice


1 cup water


chicken broth


cilantro


1 onion


1 egg


Your favorite spice. We use Adobo


salt to taste


Method


Use 1 can of chicken broth and 1 cup of water pour into pot and bring to a boil. Chop the onion and put in boiling soup.


wash rice. Mix it in with ground turkey and egg. Mush together and add spices plus salt. We use adobo but you can use any spice that you have as long as it seasons meat or poultry. make small meatballs around 1 inch each. How many depends on how much you want. Once the water is boiling add meatballs one by one. Make sure the water is hot or they will fall apart. Then bring heat down to medium. Add salt to taste. You may also add some Oregano, it gives it a good flavor. Around 1 tsp. Once meatballs are well cooked add chopped cilantro. All done! Very yummy. You can add or delete things to make this your own.





Chinese chicken salad (you can do it without chicken too)


Ingredients:


cabbage (I use green but it really doesn't matter) 1-1 1/2 cups


Carrots about 2 big ones


Cilantro 1/4 cup


Green onions 1/4 cup


lemon juic (I use half a lemon)


salt to taste


asian sesame salad dressing (I use the Lite Ken's Steak House because it is delicious) about 1/2 cup or as much as you like!


Method:


Cut cabbage into small strips


grate carrots


chop green onions


add cilantro


Now mix all together (don't forget the chicken if you are using it)


Add lemon juice and salt. Then mix all together with asian dressing. Leave it in the fridge for 30 min to an hour and then it is ready to serve. Delicious!





Easy Chicken Parmagana


Ingredients


Boneloess chicken breasts (however many you need)


a box of Shake N' Bake


spaghetti noodles


spaghetti sauce


mozarella cheese


water


oil





Method


boil the water for the spaghetti, then put spaghetti in boiling water, make sure to add a teaspoon of oil so the spaghetti will not get stuck together. Also stirring helps.


While that is cooking, prepare the chicken according to the Shake N Bake package. I think it takes around 20-30 min for the chicken to cook.


Then heat the spaghetti sauce in a sauce pan. Since it is already prepared, it only needs about ten minutes.


Now wash spaghetti. Add mozerella cheese on top of the chicken when it is ready. Let the cheese melt, then take it out. Then you are ready to prepare the dishes. Put some spaghetti on plate, then put some sauce on top of the spaghetti, now add the chicken. It is also good if you put some extra sauce on top! It is so easy!





Fettucine


Ingredients


Pasta (any kind you like)


broccoli


mushrooms


peas


Fettucine sauce in jar (sold at markets)


cooked chicken (optional)





Method


Boil pasta and wash


now in a pan mix the vegetables, pasta and sauce (also add chicken if you like)


cook together about 15 min.


Serve with parmesian cheese on top! Delicious!


Not so complicated and easy! Enjoy!
Tuna Cakes with Mashed Root Veggies





Tuna Cakes:





1 (7 ounce) pouch of tuna fish


20 Ritz Brand Crackers


1 tbsp. Wocestershire Sauce


2 tbsp. mayo


1 tsp. Old Bay or Cajun seasoning (you could just do salt and pepper as well)


1 egg





Crush 10 of the 20 Ritz crackers and combine those with the remaining ingrediets. Place in the refridgerator for about 10 minutes. After a 10 minute chill form compact paties. This recipe makes about 4 or 5 nice size ones. Crush your remaining 10 crackers and use as a coating. Return your finished patties to the refrigerator and heat olive oil over medium. When the oil is ready brown your paties on both sides. Transfer to paper towling and serve hot with tartar sauce.





Mashed Root Vegetables:





2 idaho potatoes peeled and diced


1 carrot scrubbed and diced


1 celery stalk washed and diced





Make sure to dice your carrot and celery smaller then your potatoes. Boil your potatoes, carrot, and celery in salted water until tender. Drain and mash with milk, butter, salt and pepper just as you would regular mashed potatoes.





Have fun with presentation! Your a busy mom with a small child...sometimes its the little things that can make you and your family feel special. I recommend placing a nice amount of mashed veggies in the middle of your plate. Rest one of the Tuna Cakes along side of the mashed veggies. Drizzle with tartar sauce and sprinkle with finely chopped parsley if you have it.

3-Cheese Pasta Bake





From: Campbell's Kitchen


Prep/Cook Time: 25 minutes





Serves: 4











Ingredients:








1 can (10 3/4 oz.) Campbell's庐 Condensed Cream of Mushroom Soup OR 98% Fat Free Cream of Mushroom Soup


1 pkg. (8 oz.) shredded two-cheese blend


1/3 cup grated Parmesan cheese


1 cup milk


1/4 tsp. ground black pepper


4 cups cooked corkscrew pasta











Directions:











MIX soup, cheeses, milk and black pepper in 1 1/2-qt. casserole. Stir in pasta.





BAKE at 400掳F. for 20 min. or until hot.





TIP: Use 2 cups of your favorite shredded cheese for the 8-oz. package.











Chicken Noodle Casserole





From: Campbell's Kitchen


Prep Time: 15 minutes


Cook Time: 10 minutes





Serves: 4











Ingredients:








1 can (10 3/4 ounces) Campbell's庐 Low Sodium Cream of Mushroom Soup


1/2 cup milk


1/8 tsp. pepper


1/3 cup grated Parmesan cheese


2 cups cubed cooked chicken OR turkey


3 cups cooked medium egg noodles (about 3 cups dry)


Chopped fresh parsley for garnish











Directions:











In large saucepan mix soup, milk, pepper, cheese, chicken and noodles. Over medium heat, heat through, stirring occasionally. Garnish with parsley.





TIP: For 2 cups cubed cooked chicken, in medium saucepan over medium heat, in 4 cups boiling water, cook 1 pound skinless, boneless chicken breasts or thighs, cubed, 5 min. or until chicken is no longer pink.








Asian Chicken %26amp; Rice Bake


From: Campbell's Kitchen


Prep Time: 5 minutes


Bake Time: 45 minutes





Serves: 4











Ingredients:








3/4 cup uncooked regular long-grain white rice


4 skinless, boneless chicken breast halves


1 can (10 3/4 oz.) Campbell's庐 Condensed Golden Mushroom Soup


3/4 cup water


2 tbsp. soy sauce


2 tbsp. cider vinegar


2 tbsp. honey


1 tsp. garlic powder


Paprika











Directions:











SPREAD rice in 2-qt. shallow baking dish. Top with chicken.





MIX soup, water, soy, vinegar, honey and garlic powder. Pour over chicken. Sprinkle with paprika. Cover.





BAKE at 375掳F. 45 min. or until done.





TIP: Add 2 cups frozen broccoli flowerets to the rice before baking.
I myself have been looking for the exact same thing and then I was told about this new video cooking site. I found a couple simple dishes there that were pretty scrumptious. May be you'll find something too, be sure to look to the left column too.
