The key to making great shredded hash browns is to put your potatoes into a pan that has hot oil and never cover them. Next thing to remember is that you can't be muckin around in the potatoes, leave em alone until it is time to turn them. If you are using frozen you'll know it's time because they are defrosted on the edges and only sort of frozen in the center, if they are the ones in the dairy section, you'll know because the edges are brown and look a little crunchy on the side. When you turn them put a pat of butter on top. Again, don't muck around with them, just let them sit, but turn the burner down. For seasoning use salt, pepper and a little seasoning salt. Maybe grill seasoning if you want some, I use cayenne pepper along with black pepperand I also add some chopped onion to the pan when I turn the hash browns over. You'll know that the hash browns are done when the butter on top is melted and the edge is browned. Good luck.
Use to be a restaurant cook when I was 18.
