Any good/simple recipes for baked catfish?

What kind of catfish do I need to purchase? Fillets or nuggets, or something else? :/





And also, does anyone know of a simple but also great way to bake catfish? What do I need to put it in? What kind of seasons? And how would I know when it's done?

This catfish is not baked but is really yummy. My mom makes it this way. It is something like this:





catfish fillets cut into chunks


1 onion, chopped


2 garlic cloves minced


1 jalapeno (or more if you like it spicy, we do so mom adds like 3), diced


1 bell pepper, color up to you


1 med can diced tomatoes


Saute onion, garlic and peppers in oil until soft. Add tomatoes. Cook down for about 30 minutes. Season with Italian seasoning, salt and pepper to taste. Add catfish and cook until fish is cooked through (flakes easily with a fork).Serve over rice.Any good/simple recipes for baked catfish?

1 c fresh parmesan cheese; grated





1/2 c flour





1/4 ts seasoned salt





1/2 ts black pepper





1 ts paprika





1 egg; beaten





1/2 c milk





6 catfish fillets





1/4 c butter; melted





1 clove garlic; crushed





1 paprika and black pepper








Directions


Mix well first 5 ingredients. Separately, mix well egg and milk. Dip fish in egg mixture; dredge in flour mixture. Put fish in greased 9x13-inch baking dish. Saute garlic in butter for 2-3 minutes; drizzle over fish; sprinkle with paprika and pepper; bake at 350 degrees for 40 minutes or until fish flakes.

you can pan fry the catfish in olive oil, throw in a can of dice tomatoes, add fresh basil, and sweet black olives. serve with brown rice, yellow rice, or orzo





Dip catfish chunks into plain flour and pile up on a plate. Prepare a pan of flour with either lawry's or old bay seasoning and pepper. Mix an egg with milk, dip the floured pieces into the milk and then into the seasoned flour. Fill a frying pan with only enough oil to coat it well, drop the fish pieces in, and as they brown on both sides, transfer to a pyrex pan. This leaves most of the oil in the pan. Bake all the way through. I serve it with tartar sauce -- either a grated cucumber (those little fresh ones are really good) or sweet relish mixed with mayo

I always prefer fresh fillets, that way you know what you are cooking.





My preference is to grill/broil the fillets in the oven.





Lightly season the fillets with a little salt and oil each side and place on a greased baking sheet 6'; from the heat for about 3 minutes each side.





When you see a white milky liquid coming fom the fillets that is when they are cooked.





I would serve with flluffy mashed potatoes, steamed minted pea and leeks with a creamy parsley sauce.
