Shrimps:- Grilled
2 pounds jumbo shrimp
1/4 cup vegetable oil
2 to 3 Tbsp fresh lemon juice
1 bunch green onions, with a few inches of green, thinly sliced
1/4 cup chopped parsley
3 cloves garlic, finely minced
1 teaspoon dried basil
1 teaspoon dry mustard
1 teaspoon salt
PREPARATION:
Place shrimp in a glass bowl. Stir remaining ingredients together; pour over shrimp. Cover and marinate for 3 to 4 hours. Grill over hot coals for about 5 to 7 minutes, turning halfway through the cooking time.
Serves 4 to 6.
What are some simple recipes to impress my new neighbors who just moved in?
Chicken and Broccoli Casserole
Prep time 30 minutes
Cook time 90 minutes
Serves 4-6
1 3-4 lb whole cut up chicken
2 bay leaves
1 head of broccoli separated into flouret with stalk.
3 cans undiluted condensed cream of mushroom soup.
1 陆 + 1 cups of small seasoned croutons.
1 cup grated mozzarella or swiss cheese
陆 cup dry white wine or Marsala if you prefer
2 eggs
2 tsp curry powder
1 tsp salt
陆 tsp garlic powder
1/3 tsp pepper
1/3 tsp basil
1. First par boil the chicken with the bay leaves for 40 minutes.
2. While chicken is cooking, combine all other ingredients except broccoli and 1 cup of the croutons in a 9x13 baking dish and mix well. Add the broccoli distributing evenly. Save the 1 cup croutons for later.
3. Preheat the oven to 350F
4. Remove chicken from heat discard bay leaves and when cool enough to handle, de-bone into three inch strips and add to the casserole also distributing evenly. Make sure the chicken and broccoli are completely covered in sauce.
5. Cover with foil and bake on the middle rack for 40 minutes. Uncover and top with the remaining croutons and cook uncovered for another 10 minutes.
6. Remove from oven and let stand 10 minutes and serve.
Tips:
Don鈥檛 pitch that liquid, instead strain it put into a plastic container freeze and save it for recipes or soups calling for chicken stock.
You could put the chicken in the casserole bone in to save time but I find this dish is much better if you can just spoon it on your plate and dig in without those pesky bones.
This goes well with a garden salad and a nice dry white wine.

one chopped red onion
one chopped or sliced red bell pepper
one green bell pepper
one yellow bell pepper
one can of sliced mushrooms
one or two cans of beef broth
mozzarella cheese
garlic bread, bread sticks, or cheese sticks
Cook the sausage. Drain. Add pepperoni, the bell peppers, onion, and mushrooms. Saute a little. Then add the broth. Bring to boil. Then let it simmer for about 15 minutes. After you have the soup dished out into bowls than sprinkle cheese on top.
This has a wonderful flavor. Also it is fast and easy to make. And it is original. Hope everything goes good. And good luck with the girls.

Ingredients: 400 g Savoiardi biscuits (also known as Ladyfingers), 4 eggs, 100 g sugar, 500 g Mascarpone cheese, Espresso coffee, 2 tsp Marsala liquor or Rum or Brandy or Cognac (optional), cocoa powder.
Carefully separate the yolks and the whites. Mix the egg yolks and the sugar until creamy, 10 minutes or more, depending on your mixer (it has to become a light yellow color). Then add the mascarpone cheese and mix until it is incorporated into the cream. In another bowl, whip the egg whites until stiff peaks form (you can add a pinch of salt or of cream of tartar to speed up the process). With a wooden spoon, transfer the whites to the mascarpone mixture and slowly incorporate it (do not mix the whites into the mascarpone cream with the mixer, otherwise they'll deflate too much). Add 2 teaspoons Marsala liquor in the cream if you like.
Prepare Espresso coffee. Carefully dip in ladyfingers one at a time just until the outside of the biscuit is barely damp. Arrange cookies side by side in a dish. After the first biscuits are layered, spread 1/2 of the cheese mixture on top. Repeat this operation one more time (you have to create only 2 layers biscuits). Sprinkle with cocoa powder over the top and refrigerate for at least 6 hours before serving
COPPER MOUNTAIN QUICHE
1/2 cup Butter
4 oz. Cream Cheese
1 cup + 2 Tbs. All-purpose Flour (divided)
10-oz package frozen Chopped Spinach
1 cup Cheddar Cheese, grated
1 cup Swiss Cheese, grated
3 whole Eggs, lightly beaten
1/2 cup Mayonnaise
1/2 cup Milk
1/2 jar Bacon Bits OR 10 slices Bacon, crisply cooked and crumbled
8 oz. fresh Mushrooms, sliced
1 bunch Green Onions or Scallions, trimmed and sliced
Combine the butter, cream cheese, and 1 cup of the flour in a small bowl. Mix with a pastry blender or fork, cutting the butter and cream cheese into the flour until a consistently crumbly mixture is formed.
Place the flour mixture in a 10'; pie plate or quiche pan, and press evenly to form a crust. Refrigerate. Pre-heat the oven to 350掳F.
Cook the spinach in a pot of lightly salted boiling water, drain well, and chop. Drain the spinach again on paper towels to remove all excess moisture.
In a large bowl, combine the spinach with the two tablespoons flour. Add the cheddar and Swiss cheeses, eggs, mayonnaise, milk, bacon bits or crumbled bacon, mushrooms, and green onions.
Pour the mixture into the chilled pastry shell and bake for 1 hour, or until set. Serve warm.
