~Raspberry Almond Crumb Tart~
1/2 cup sliced almonds (skins on)
6 tablespoons granulated sugar
1 1/3 cups plus 2 tablespoons all-purpose flour, divided
1/2 teaspoon salt
6 tablespoons cold unsalted butter, cut into 1/4-inch pieces
1 large egg yolk
1 teaspoon vanilla extract
1/4 teaspoon almond extract
4 1/2 cups fresh or frozen (not thawed) raspberries
1 teaspoon confectioners鈥?sugar
1. Preheat oven to 400掳F. Lightly coat a 9-inch removable-bottom tart pan with cooking spray.
2. Combine almonds and sugar in a food processor; pulse until the almonds are finely ground and incorporated with the sugar. Set aside 1/2 cup of the mixture.
3. Add 1 1/3 cups flour and salt to the remaining sugar mixture and pulse briefly to blend. With the motor running, add butter a few pieces at a time until well incorporated.
4. Stir egg yolk, vanilla and almond extracts together in a small bowl until blended. With the motor running, add to the processor and pulse until the mixture begins to clump and form a dough, about 1 minute (the mixture will look like crumbly sand). Set aside 1/3 cup of the mixture for the topping.
5. Transfer the remaining dough to the prepared tart pan; spread evenly and press firmly into the bottom and up the sides to form a crust.
6. Add the remaining 2 tablespoons flour to the reserved almond mixture; stir to blend. Gently toss raspberries with 2 tablespoons of this mixture in a medium bowl until coated. Spread the berries evenly in the tart pan. Sprinkle the remaining almond mixture over the berries. Pinch the reserved dough into small clumps to make crumbs and sprinkle
the crumbs on top of the berries.
7. Bake the tart for 15 minutes. Reduce the oven temperature to 350掳 and bake until the crust and crumbs are golden brown, about 45 minutes more. Let cool on a wire rack for about 30 minutes. Serve warm or at room temperature. Remove the pan sides; place confectioners鈥?sugar in a fine sieve and dust the tart just before serving.

Crockpot Chocolate Raspberry Strata
6 cups Hawaiian bread, Challah or brioche, cut into 1 inch cubes
1 1/2 cups semisweet chocolate chips
1/2 pint fresh raspberries (do not use frozen), rinsed %26amp; drained
1/2 cup heavy cream
1/2 cup milk
4 eggs
1/4 cup sugar
1 tsp. vanilla extract
Whipped cream
Place half of the bread cubes in a well-buttered 3 1/2 qt. crockpot. Sprinkle on half of the chocolate chips %26amp; raspberries. Cover with the remaining bread cubes, then top with the remaining chocolate chips %26amp; raspberries.
In a medium bowl, whisk together the cream, milk, eggs, sugar, %26amp; vanilla until well blended. Pour evenly over the bread mixture in the cooker.
Cover %26amp; cook on high heat about 1 3/4 to 2 hours, or until set. Do not cook on low heat for a longer time. Let stand for about 5 to 10 minutes before serving. Serve garnished with whipped cream,
OOhh that crock pot recipe sounds yummy!
This one may sound a bit complicated but it is a light and elegant way to finish off a good meal...
Rasberry pears with white chocolate mousse:
cut 3 pears in half and take out the middle core. I use a melon baller for that.
Boil the pears in a saucepan with water and a bag of frozen rasberries, boil until pears are tender but still firm, and the inside of the pears turn pink.
Remove pears, add cup of sugar to rasberry water and bring to a boil, reduce down to a thick rasberry syrup.
Mix one container of cool whip with a box of instant white choc pudding. After this sits for about an hour, it makes an amazing mousse. Drop that into the middle of the pears and drizzle with rasberry syrup.
Its alot eaier than it sounds and makes a very impressive presentation. Top with a sprig of mint and you will be Martha Stewart.
