peanut butter and banana sandwiches are a good standby or you could try this desert that the hubby wants me to make called banana's foster.
9 tbsp brown sugar divided
2 tbsp butter
1/4 cup water
2 tbsp tequila or dark rum (optional)
3 flour tortillas (10 inch or burrito style)
2 lg bananas, peeled, cut into coins
3 tbsp chopped walnuts
toothpicks, for securing tortillas
2 cups veggie oil
3 cups premium vanilla ice cream
In a small saucepan, bring 6 tbsp brown sugar and the butter and the water to a boil. Stir in liquor, simmer to blend flavors, about 1 minute. Remove from heat, and set aside.
Place one tortilla on a work surface. Place 1/3 of the banana slices just below the center, forming the fruit into a log; sprinkle with 1 tbsp brown sugar and 1 tbsp walnuts. Fold both sides of the tortilla over the filling, then fold the bottom of the tortilla over the filling and roll it over to form a packet. Secure with toothpicks.
Repeat with remaining fruit, tortillas, sugar, and nuts. You can make ahead to this point and hold at room temperature for 1 hour.
Meanwhile warm oil in a dutch oven set over medium heat until it reaches 350 degrees on a candy or deep fry thermometer. Add all 3 stuffed tortillas. Fry, turning once, until golden brown, about 2 minutes on each side.
Transfer to paper towels, lightly blot surface oil, remove thoothpicks and halve on the diagonal with a serrated knife.
Spoon 1 tbsp butter sauce in the bottom of each of six shallow bowls .
Place half a tortilla and 1/2 cup of ice cream in each pool of sauce. Drizzle with remaining sauce and serve immediately.

Banana pudding.
Slice about four or five bananas and set them aside. Whip up two packets of Jello vanilla pudding, sit in the fridge to chill. Line the bottom an aluminum moulet pan with either vanilla wafers or Pepridge Chessmen and then coat with the pudding. Add the slced bananas evenly over the pudding. Repeat with the second layer. Add some whipped cream on the second layer and sit in the fridge to chill for about twenty-five minutes. Take it out, get a spatula and a plate %26amp; fork and enjoy :-)
Sliced bananas on buttered cinnamon fruit toast.
Grilled Bananas Recipe
2 bananas (not too ripe)
2 tablespoons sugar
2 tablespoons ground cinnamon
2 tablespoons honey
Vanilla ice cream, for serving
Bourbon or other liqueur, for drizzling, optional
Build a charcoal fire or preheat a gas grill.
Slice the bananas, in their skins, in half crosswise and then lengthwise so each banana yields 4 pieces. Set aside on a clean platter. In a small bowl, combine the sugar and cinnamon. Drizzle the honey on the cut sides of the bananas and sprinkle them with the cinnamon sugar. Let the bananas sit for 5 minutes.
Place the bananas, cut side down, on the center of grill. Grill for 2 minutes or until grill marks appear. Using a pair of tongs, turn them over and cook for 5 more minutes, or until the skin pulls away from the bananas. Remove the bananas from the grill and serve them immediately, on top of vanilla ice cream and drizzled with bourbon or liqueur, if desired.
Banana Crunch Muffins 18 large muffins
3 cups all-purpose flour
2 cups sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 pound unsalted butter, melted and cooled
2 extra-large eggs
3/4 cup whole milk
2 teaspoons pure vanilla extract
1 cup mashed ripe bananas (2 bananas)
1 cup medium-diced ripe bananas (1 banana)
1 cup small-diced walnuts
1 cup granola
1 cup sweetened shredded coconut
Dried banana chips, granola, or shredded coconut, optional
Preheat the oven to 350 degrees F.
Line 18 large muffin cups with paper liners. Sift the flour, sugar, baking powder, baking soda, and salt into the bowl of an electric mixer fitted with a paddle attachment. Add the melted butter and blend. Combine the eggs, milk, vanilla, and mashed bananas, and add them to the flour-and-butter mixture. Scrape the bowl and blend well. Don't overmix.
Fold the diced bananas, walnuts, granola, and coconut into the batter. Spoon the batter into the paper liners, filling each 1 to the top. Top each muffin with dried banana chips, granola, or coconut, if desired. Bake for 25 to 30 minutes, or until the tops are brown and a toothpick comes out clean. Cool slightly, remove from the pan, and serve.
Banana Cream Pie
4 1/2 cups sifted flour
2 teaspoons salt
2 teaspoons sugar (optional)
1 1/2 cups (3 sticks) cold unsalted butter, cut into pieces
1/2 cup ice water
Banana cream filling, recipe follows
Banana Cream Filling:
8 cups milk
1/4 teaspoon salt
1 teaspon vanilla extract
24 egg yolks
2 2/3 cups sugar
1 cup cornstarch
6 tablespoons cold unsalted butter, cut into pieces
6 ripe bananas, sliced into coins 1/4-inch thick
Whipped cream for serving (optional)
In the bowl of a mixer fitted with a paddle attachment, combine the flour, salt, and sugar. Mix for 1 minute. Add the butter and mix just until the mixture resembles coarse crumbs. Add water then gradually add to the flour mixture. Mix at medium speed just until a dough forms. Do not over-mix.
Divide the dough in 2 and shape into round, flat disks on sheets of waxed paper. Wrap separately and refrigerate for 30 minutes. On a lightly floured surface, roll the dough with a lightly floured rolling pin into a large circle about 1/8-inch thick. Place your pie plate upside down on top and trim with a sharp knife, leaving about 2 inches extra dough all the way around. Roll the dough circle up onto your rolling pin, then unroll it into the pie plate; or, fold into quarters, transfer to the pie plate, and unfold. Gently press the crust into place, turning any excess dough hanging over underneath to create a thicker edge. Press the edge with the back of a fork to create a decorative edge. Repeat with the other piecrust and leave covered for 30 more minutes.
Preheat the oven to 375 degrees F. Line each crust with a sheet of regular-weight aluminum foil, then pour in about 3/4 pound dried beans or pie weights. Bake the crusts 25 to 30 minutes, just until dry and set - then remove the foil and beans. Bake another 10 to 15 minutes or until golden brown, checking frequently to prevent over-baking. Remove from the oven immediately and let cool on wire racks.
Banana Cream Filling: Combine the milk, salt, and vanilla in a non-aluminum pan and heat, stirring occasionally. As soon as the mixture begins to boil, turn off the heat and stir the mixture for 1 minute. Whisk the egg yolks and sugar together until thick and pale yellow, then gradually whisk in the cornstarch. Gradually whisk in half of the hot milk mixture.
Pour the yolk-milk mixture back into the saucepan with the milk mixture and cook, whisking frequently, until the mixture boils and begins to thicken. Reduce the heat to medium-low and cook, stirring, about 5 minutes more, until the mixture no longer tastes starchy. The mixture should become very thick, like a set custard. When cooked, turn off the heat. Stir in the butter until it melts completely and fold in the bananas.
Pour the filling into the pre-baked pie shells. Push the banana slices below the surface to prevent them from browning, then smooth the tops. Cover with plastic wrap, gently pressing the plastic wrap against the surface to prevent a skin from forming. Refrigerate at least 7 hours or overnight, and serve with whipped cream.
Banana Purse
Nonstick vegetable cooking spray
3 bananas, peeled and thinly sliced
1/4 cup maple flavored pancake syrup
1 package frozen puff pastry (2 sheets), thawed
1 tablespoon granulated sugar
1 teaspoon ground cinnamon
2 tablespoons whole milk
Position rack in center of oven and preheat to 400 degrees.
Line a heavy large cookie sheet with foil. Spray foil with nonstick spray. In a medium bowl combine bananas and syrup. Mash bananas slightly with a fork. On a clean surface, lay flat 1 sheet of puff pastry. Cut pastry in 1/2 lengthwise. Using a rolling pin, roll out each pastry sheet into a 15 by 5-inch rectangle. Cut each rectangle crosswise into thirds, forming 6 squares total. Evenly distribute 1/2 of the banana mixture onto center of each square. Fold corners of pastry into center and pinch ends together, twisting to seal. Repeat with remaining sheet of puff pastry and banana mixture. Arrange pastries on prepared cookie sheet. In a small bowl, combine sugar and cinnamon. Brush pastries with milk. Sprinkle cinnamon-sugar over pastries. Bake for 15 minutes or until golden. Serve warm.

Banana wine is really good too...............but takes a little longer.
banana bread , make as a scone recipe then add mashed bananas, this will freeze.. what about banana ice cream.
Just pop your bananas on a baking tray, into the oven on 200 degrees and bake them until the skin has turned black. Get them out and serve them hot with scoops of vanilla ice cream and drizzle either honey or caramel sauce over the top. Is a delicious pudding and one of my favourites - espescially for bananas that are already brown and on the verge of going bad... Enjoy!
