Simple recipes?

I don't have much money but I need some ideas for supper. I hate cooking the same darn meals all the time.Simple recipes?
It sure would have been nice if you would have told us what you hate to cook over and over again, that would narrow the field down, and maybe a ballpark range of what you'd like to spend, then we could focus our attention on the necessities and not all the fluffSimple recipes?
This is delicious. It's a little item I use to make in a restaurant that I had back in the 70's.





You need:





Corn tortilla's


Soy Mayo


Ripe Avocado


Shelled sunflower seeds


Alfalfa Sprouts


Gaylord Hauser Seasoning called Spike.


Pace Picante sauce - Medium


Sliced Tomato





Spread Soy Mayo on Tortilla


Lay down grated Monterrey Jack Cheese with or without Jalapeno.


Melt cheese in microwave. Not too much. Try not to let it bubble.


Put sliced avocado on melted cheese and tortilla.


Put on sliced tomato


sprinkle spike seasoning on it.


Put a pinch or two of sunflower seeds


Slap on Picante Sauce.


Put alfalfa sprouts on top, fold and enjoy!

www.allrecipes.com has a fantastic selection of recipes. I use them all the time; their recipes are not gourmet, necessarily but they are tasty. Many of the recipes require ingredients that most people keep on hand.
Tator tot casserole: (this can be adjusted to feed more people)


1 pound ground beef browned


1 family size can of cream of chicken soup


1 can whole kernel corn, drained


1 bag tator tots.


mix the hamburger soup and corn together in a 9x13 baking dish or casserole dish, pour bag of tator tots over the top, bake according to the directions on the tator tot bag.





Goulash


1pound ground beef, browned and drained


1 16 oz package elbow noodles or shell macaroni, cooked and drained


2 cans or jars of spaghetti sauce (your choice of flavor)


mix all together, serve warmed





EASY chicken pot pie


1 2/3 cups frozen mixed vegetables, thawed


1 cup cut-up cooked chicken (can use canned chicken too)


1 can (10 3/4 ounces) condensed cream of chicken soup


1 cup Original Bisquick庐 mix


1/2 cup milk


1 egg


Heat oven to 400潞F. Stir vegetables, chicken and soup in ungreased 9-inch pie plate.


2. Stir remaining ingredients until blended. Pour into pie plate.


3. Bake about 30 minutes or until golden brown








Impossibly Easy Lasanga Pie


1/3 cup ricotta cheese or small curd creamed cottage cheese


3 tablespoons grated Parmesan cheese


1 pound lean ground beef


1 cup shredded mozzarella cheese (4 ounces)


1/2 cup spaghetti sauce


1/2 teaspoon salt


1/2 cup Original Bisquick庐 mix


1 cup milk


2 eggs


Additional spaghetti sauce, heated, if desired








1. Heat oven to 400潞F. Grease 9-inch pie plate. Spread ricotta cheese in pie plate; sprinkle with Parmesan cheese. Cook ground beef until brown; drain. Stir in 1/2 cup of the mozzarella cheese, 1/2 cup spaghetti sauce and the salt; spoon evenly over cheeses.


2. Stir Bisquick mix, milk and eggs until blended. Pour into pie plate.


3. Bake 30 to 35 minutes or until knife inserted in center comes out clean. Sprinkle with remaining cheese. Bake 1 to 2 minutes longer or until melted. Cool 5 minutes. Serve with additional spaghetti sauce.

It is so good, that if you just list some ingredients you have, it will give you a recipe.
Been there, and done that. I would recommend Enchilada Casserole if you like Mexican food. It is very cheap to make, and even easier to prepare. Yum Yum.


Ok, all you do is brown 1lb. hamb. meat, drain fat. Add 2 cans cream of chicken soup, and 1 can enchilada sauce to cooked meat. Spread flour tortillas on bottom of 9X13 pan. top with meat mixture, and top that with shredded Cheddar cheese. . Repeat all three layers until top of pan. End last layer with cheese. bake in oven on 325 until cheeses is melted. Serve with side of Spanish rice and chips. Cost of meal $10-$12.
hmm... ever tried this? Sort of like a home-made pizza. Very easy to prepare. Get some bread, spread some tomatoe sauce (not ketchup), a little olive oil, tuna, olives, green peppers, cheese and any other ingredient you can think of and that you like. Add some olive oil on top and put in the oven.... it will be ready in no time and it's very yummmy! :)
CHICKEN MARSALA - In first frying pan, Cut boneless chicken into chunks or strips, coat with flour and cook in butter until all sides just start to brown, set aside. In second frying pan, melt butter and add fresh sliced mushrooms (lots) and cook until they just start to soften, add generous amount of Marsala wine and a couple of finely diced garlic cloves and cook for three minutes. Add chicken from first pan and cook until sauce thickens (flour from chicken will thicken sauce), Add a small spritz more Marsala wine ( to refresh Marsala wine flavor) and serve immediately.
I am on a budget and I make a lot of soups. Always keep broths in your pantry and lots of frozen veggies in your freezer. You can just add some herbs and leftover meat and serve with bread.

Here are some samples of their recipes:





French Dip Sandwiches


1 rump roast


1/2 cup soy sauce


1 tsp beef bouillon (or 1 cube)


1 bay leaf


1 tsp dried thyme


1 tsp garlic powder





Combine all this in a slow cooker and then add enough water to mostly cover the meat. I started with hot water this time, because I started it cooking a little later than I'd planned on. In my new slow cooker, which cooks hotter than the old ones, I started this at 1pm on low and it was done by 6:30. The water was pretty much at a simmer nearly the whole time. If you have an older slow cooker, I'd do 10 hours on low or 5-6 hours on high.





Get some good rolls for the sandwiches. Take the meat out and slice it as thinly as possible, then layer on the bread. Serve with the sauce and dip the sandwich as you eat.





Use the leftover broth and beef in beef and barley soup if you'd like.

Chicken Breasts with Yogurt Marinade


These have an Indian flair to them. Mix up the marinade in the morning and let the chicken sit all day. When it's time for dinner, just grill them for 10-15 minutes and you've got a very tasty main dish!





1 1/2 cups plain yogurt


1 Tbs olive oil


2 Tbs lemon juice


1-2 cloves garlic, minced


1/2 tsp dried thyme


1/2 tsp dried tarragon


1/2 tsp salt





1 Tbs honey





3-4 boneless skinless chicken breasts





Mix up the yogurt, olive oil, lemon juice, garlic, thyme, tarragon and salt. Put 1/2 cup of this into a small bowl, stir in the honey, and set aside to use as a sauce on the cooked chicken.





Marinate the chicken in the rest of the yogurt sauce. When you're ready to grill, wipe or shake off the excess yogurt and discard it. Grill the chicken until done, about 10-15 minutes total, turning once about halfway through.





Make it an all-grill dinner and serve with grilled squash or skewered vegetables.

Shepherd's Pie


(serves 6)





1 pound ground beef


1 onion, chopped


1 clove garlic, minced


1 cup oats if you want to stretch the meal


1 cup or more mixed frozen vegetables


1 tsp Worcestershire sauce


1/2 cup red wine (because it was open)


1 tsp cumin


salt and pepper to taste


1/4 cup ketchup


1/2 cup sour cream


a few cups mashed potatoes


1/2 cup grated Cheddar cheese





Brown the ground beef with the onions and garlic. Drain any fat. (You can also rinse with hot water after draining.) Stir in the vegetables and seasonings (up to the sour cream) and cook a few more minutes to blend. Turn the heat off and stir in the sour cream.





Put the meat and vegetable mixture into a 9x9 pan. Spread the mashed potatoes over the top, then sprinkle the grated cheese on top of the potatoes. Sprinkle with papprika if you like.





Bake at 350 for 20-30 minutes until heated through. Of coures, if your skillet is oven-proof put the mashed potatoes and cheese on top of the meat and then put the whole skillet in the oven rather than dirtying another dish. .
salads and pasta are ok, and they are not expesive
buy some chicken legs, season them up with salt, garlic powder %26amp; pepper, and pour a can of cream of mushroom soup over it in a casserole dish. add a half can of water, put in a few veggies, put a lid on it and bake it in the oven on 350 degrees or in a crockpot until the chicken is tender. (chicken legs- drumstick and thigh attatched) are pretty cheap, sometimes i catch them on sale for 39-59 cents a pound.
I have been there! Some cheap %26amp; descent recipes for family of 2-3.


Salmon Patties





Another one I do, is a can of green beans mixed into cooked ground beef (1 lb) with valveeta cheese (1/4 cup). (LIke a Hambuger Helper) Add garlic powder and seasoning


Then serve with garlic bread.


You can do these for under $6.

JACK'S CHEAP CHICKEN





1 to 2 lbs. chicken breasts


1 can cream of mushroom or cream of chicken soup


1/2 c. water


Salt to taste





Preheat oven to 350 degrees. Pour soup and water into pan, mix well. Salt chicken and put into soup. Bake at 350 degrees until done. Serve soup as gravy over rice or potatoes.





Super Easy Chicken Wraps





Ingredients:


1 pkg. tortillas


2-3 fresh tomatoes


1 bottle ranch dressing


1 jar hot wing sauce (mild or hot)


1 pkg. breaded or plain chicken breast (you can also use fresh chicken breast, breaded and fried--or grilled--however I think it costs more and takes much longer)





Directions:





Cook chicken as directed on package then cut into slices. Heat tortillas in the microwave (quickest). Place tortilla on plate, add chicken, tomatoes, wing sauce and ranch dressing. Wrap and enjoy!





These are super delicious and you can mix and match your toppings to suit you. All together it takes about 25 minutes to make and feeds a bunch so it goes a long way!





Easy Hamburger Casserole





Ingredients:





1 pound ground beef, cooked and drained, then chopped finely


1 can tomato soup (do not add water)


1-2 cans green beans, drained very well


Minced or chopped onion, as desired


Instant mashed potatoes, 6-8 servings (make and set aside)


Velveeta cheese





Directions:





Mix the first 4 ingredients well, then put in the bottom of a greased baking dish, 2-quart or larger. Top with mashed potatoes and bake at 350 degrees for 35 minutes. Remove from oven and add Velveeta cheese sliced thinly to the top and return to oven until cheese is melted and turning brown. Let cool, then eat! This one goes fast, if you have a large family you might need to make two!





Frito Pie





1 can chili (homemade OK too) 鈥?$0.99


1 1/2 cups fritos - $0.45


1 cup shredded cheese 鈥?$0.25


1/3 cup chopped onion 鈥?$0.20


optional parsley sprig 鈥?negligible





Total: $1.89





Preheat the oven to 350掳F or so. Spread out about 1/2 the chips on the bottom of a glass pie plate dish or baking dish. Spread about 1/2 the onion and half the cheese on the Fritos. Top with all the chili. Then put the remaining cheese, onion, and Fritos on top of that.





Bake it for about 17-20 minutes and serve it hot. Instant trailer cuisine.

How about a jam sandwich? Take two pieces of bread, and jam them together!
