Shepards Pie.
I work 2 jobs, and I got 2 kids, 2 dogs and a husband... I dont always have time to cook a long big dinner..
But something that usually fills us up... and is mostly cooked in one dish makes my life a WHOLE lot easier,
Brown 1# ground Beef, Drain.
Add 1 ( aprox 16oz) Jar of Beef Gravy. and 1 bag of thawed frozen veggies ( of your preference) , Mix until it is all heated.
Dump meat veggie mix into a 9x13 pan. Sprinkle some greated cheese, Were thinking layers now.. like a lasagna.
I like to do a layer of stuffing ( espically if I use chunks or ground chicken and gravy) * I use stove top, prepare as directed on package , then smooth over layer of cheese, finally top with a layer of prepared mashed potatoes... I use instant... flavored with garlic , but real mashed is great too...
pop in the oven for 45 min @ 350... add some biskets... and enjoy!!Anyone have any simple recipes for dinner?
I mean that in addition to the shepards pie, make some can or frozen rolls/biskets.. to compliment the meal. Also a side salad would work as well, glad you liked the TIP!! Report Abuse
When I am in a hurry and don't want to put forth a lot of effort I make salmon. You can pan fry it, bake it, or George Foreman grill it. Just put some olive oil on it and cook until it passes the fork test. That is until the layers of fish are easy to separate with a fork and are opaque/milky. Don't overcook.
Garlic butter. I use smart balance to go along with the whole health theme of fish. Just microwave some in a small dish for a few seconds with garlic powder are onion powder. Make sure you cover with a saucer in the microwave or most of it won't be in the dish.
I Like to serve with brown rice left overs or whole grain pasta noodles. Just put some olive oil Garlic/onion powder and maybe some basil on it. (brown rice as left overs because it takes 45 min to boil it) Whole wheat pasta is fast.
Frozen Vegetables. Just pop them in the microwave covered with a splash of water. NOTE: corn is not a vegetable.
Beef Stroganoff
Ingredients:
2 T. Butter
1 medium onion, diced
1 陆 lb. Stew beef
2 -10 陆 oz. Cans Cream of Mushroom soup
2 -10 陆 oz. Cans Cream of Celery soup
Directions:
Melt butter and saute onion till tender. Add beef and saute till brown. Add soups and simmer 20 to 30 minutes. Serve over rice or noodles.
Serves 6

If you have a crockpot, put in there: Chicken pieces, carrots, potatoes, onion, salt, pepper, thyme and one can chicken broth. Sprinkle with envelope dry onion soup mix. Cook on low all day or high 4 to 5 hours.
If you don't have a slow cooker, the put the same in the oven at 350 degrees for two hours.
Also good is 1lb stew beef, 2 bags frozen stew or soup vegetables, one can diced tomatoes, one envelope dry onion soup mix, stir and either do slow-cooker all day on low or 3 hours at 300 degrees (covered) in regular oven.
My personal favorite easy dinner requires a quick stop at the local grocery that has a salad bar. I get a 1lb package of beef or chicken strips (thin cut like for fajitas/stir-fry) and then hit the salad bar for sliced onions, red and green peppers, mushrooms, broccoli, anything you like... then take it home and stir fry it (meat first in hot oiled skillet or wok, then add veggies), add a little soy sauce and then serve over ramen (3 minutes) or rice (get the boil in bag kind)

EASY QUESADILLAS
INGREDIENTS
Flour Tortillas
Cheese (Colby Jack or Cheddar)
Chicken or Beef
Salsa or Taco Sauce
Butter
DIRECTIONS
Butter a tortilla and face buttered side down in fry pan on medium heat. Top with cheese, meat, veggies, and another buttered tortilla. Cook on each side until the cheese is hot and they are golden brown.
TIPS
Fill these quesadillas with veggies and/or beans of your choice. They go great with corn, corn bread, and Mexican style rice on the side.
PESTO CHEESE CHICKEN ROLLS
INGREDIENTS
4 skinless, boneless chicken breast halves - pounded to 1/4 inch thickness
1 cup prepared basil pesto
4 thick slices mozzarella cheese
DIRECTIONS
Preheat the oven to 350 degrees F (175 degrees C). Spread 2 to 3 tablespoons of the pesto sauce onto each flattened chicken breast. Place one slice of cheese over the pesto. Roll up tightly, and secure with toothpicks. Place in a lightly greased baking dish. Bake uncovered for 45 to 50 minutes in the preheated oven, until chicken is nicely browned and juices run clear.
PARMESAN CHICKEN
1 pound boneless and skinless chicken strips
1 tablespoon Dijon mustard
1/2 cup grated Parmesan
2 teaspoons olive oil
1 (8-ounce) can tomato sauce
1 tablespoon fresh lemon juice
1/2 teaspoon chili powder
1/2 teaspoon hot sauce
1/4 teaspoon ground black pepper
DIRECTIONS
To make chicken strips, coat chicken all over with Dijon mustard. Place Parmesan in a shallow dish or plastic bag, add chicken and turn (or shake bag) to coat. Heat olive oil in a large skillet over medium heat. Add chicken and cook 5 minutes per side, until cooked through. Meanwhile, in a small saucepan, combine tomato sauce, lemon juice, chili powder, hot sauce, and black pepper. Set pan over medium heat and bring to a simmer. Serve chicken with sauce.
ROSEMARY GARLIC CHICKEN
INGREDIENTS
2 skinless, boneless chicken breasts
2 tablespoons minced or freshly chopped garlic
2 tablespoons dried rosemary
1 tablespoon lemon juice
salt and pepper to taste
DIRECTIONS
Preheat oven to 375 degrees F. Cover the chicken breasts with garlic, then sprinkle with rosemary, lemon juice, and salt and pepper to taste. Place in a 9x13 inch baking dish and bake in the preheated oven for 25 minutes or until done and juices run clear (baking time will depend on the thickness of your chicken breasts).
Chicken Rotini Stovetop Casserole
1 (12oz.) pkg. rotini pasta
2 cups half and half cream
1/2 c. butter
2/3 c Parmesan cheese
1/2 tsp dried basil leaves
1/2 tsp dried oregano
4 skinless, boneless chicken breast halves, cubed
1/2 green bell pepper, chopped
1/2 red bell pepper, chopped
1) Boil pasta for 8-10 minutes
2)Combine half and half and butter in saucepan over medium heat. Boil gently stirring until mixture has reduced to 1 1/2 to 1 2/3 cups. Remove from heat whisk in cheese, basil, and oregano. Cover and set aside
3)Sautee chicken in a large skillet until lightly browned on both sides. Stir in green and red peppers and cook until veggies are tender and chicken is no longer pink in the middle
4) In a casserole dish, combine the hot cooked pasta, chicken mixture, and sauce. Mix well, and serve immediately.
Simple Slow Cooker Dinner
To make this simple and fast meal in the slow cooker, you can take chicken breasts, or pork chops and cover them with your favorite soup.

4-6 chicken breast or pork chops
2 cans creamed soups
noodles or rice, cooked

Take a roast put it in a crock pot. Put in a cup of water and a pack of Lipton Onion Soup mix. Turn it on. Let cook for 4 - 6 hours. Put in a can of whole potato's and a can of Carrots about 45 minutes before serving. If you want to be fancy put in a tube of biscuits and sprinkle some cheddar cheese over it at the same time. You have pot roast with cheesy dumplings!
Boneless skinless Chicken Breast can of cream of mushroom soup cup of rice and a cup of water in a casserole dish (more water if you want more soupy) Pepper and cover put in oven for about 1hr on 350 yum!!
