First of all, don't be affraid to experiment and try something adventurous! I was a professional chef for 5 years when I got married. My wife was terrified I'd think her cooking was terrible and be all upset. I'm just happy everytime she makes the effort to cook dinner. I'm sure your husband would agree. Anyway, here are a few very easy ideas.

Cream of Chicken

1 鈥?1陆 lbs. boneless, skinless chicken breast cut into bite-sized chunks

1 can cream of mushroom soup

1 can of milk

飩?陆 lb. broccoli (frozen is fine, otherwise blanch fresh for a few minutes before adding)

8 oz. (or two small cans) mushrooms

chopped onion and garlic (optional)

either 1 鈥?1 陆 tsp. dried rosemary or 1 tbls. chili powder

If you want to put in some effort, let the chicken marinate (whole) in olive oil and rosemary (just put it in a bag in the fridge for 8 or so hours). In a very large pan, brown the chicken over medium high heat. Season with salt %26amp; pepper (substitute chili powder for pepper is you go the spicy route). Turn the heat down to medium/medium low and sweat the onions and garlic (if you use them) and add the mushrooms. Once the aromatics are translucent and the chicken is cooked through, add the soup and can of milk. Bring to a boil (over the medium/medium low heat) and add broccoli. Re-season and add the rosemary or chili powder. Reduce heat to low and cook, stirring often, until the broccoli is warm.

Sausage %26amp; Pea Farfali

1 lb Italian sausage 陆 cup grated parmesan cheese

陆 medium onion, chopped 1 clove garlic

陆 tsp red pepper flakes 1/3 cup white wine

戮 cup chicken broth 1 cup + 2 tbls heavy cream

2 cups peas

Brown sausage over medium-high heat (6-8 minutes). Remove to paper towels. Pour off all but 1 tbls grease. Sweat onion 3-5 minutes. Add garlic and pepper flakes, cook another 30 seconds. Add wine and simmer until almost evaporated, 1-3 minutes. Add broth and 1 cup cream; simmer until sauce reaches consistency of light cream, 6-9 minutes. Stir in sausage and peas and cook for about 2 more minutes. Remove from heat, season, and stir in cheese. Toss sauce and remaining cream with cooked pasta.

Chicken Saltimbocca

陆 c AP flour

8 thin, bone/skinless chicken cutlets (飩?2 lbs.)

1 tbls. minced fresh sage

8 thin sliced pieces prosciutto (飩?3 oz.)

1录 c white wine

2 tsp. lemon juice

4 tbls. butter (cubed and chilled)

Heat over to 200飩癋. Dry cutlets w/ paper towel, season, and dredge in flour. Sprinkle evenly w/ sage. Place one slice prosciutto on each cutlet. Heat pan over medium-high heat; cover w/ 2 tbls. of olive oil. Cook half of cutlets, ham-side down, 2-3 minutes per side in pan. Transfer to over to keep warm and repeat with rest of cutlets.

Pour off excess oil. Deglaze w/ wine, and reduce to 飩?1/3 c (5-7 minutes). Stir in lemon juice. Reduce heat to low and whisk in butter 1 tbls. at a time. Season sauce and serve over chicken.I need a few simple recipes that are very easy to cook?!? Please help!?
My mom makes an awesome meatloaf.

Go by a regular recipe and add some salsa.

Then I have a great recipe for a

Chicken Pot Pie.

Buy 1-lb boneless chicken breasts

2 tblsp of butter, divided

1/2 tsp salt

1/2 tsp dried thyme leaves

1 (16 ounce) package frozen veggies thawed and drained

1 (10 3/4 ounce) can condensed cream of chicken soup (undiluted) Buy Campbells

1/3 cup dry white wine

1 refrigerated piecrust (1/2 of 15 ounce package), at room temperature

Remove skin from chicken and discard. Cut chicken into 1 -inch pieces. Preheat oven to 425 F. Melt 1 tablespoon butter in broilerproof skillet (I use and iron skillet, but don't think it matters. Just a skillet of any kind I think) over medium-high heat. Add chicken; sprinkle with salt and thyme. Cook and stir for 1 minute.

Reduce heat to medium-low. Stir in veggies, undiluted soup and wine; simmer about 5 minutes.

While soup mixture is simmering, unwrap 1 piecrust. put in bottom of the pie pan.

Remove chicken mixture from heat; pour into pie pan and use 1 piecrust to put over top. seal all the way around and cut an ';X'; in the middle to let it vent. Brush with some melted butter and bake until the top is a beautiful golden color. and the chicken mixtur is bubbly. Serve immediately.

Hope you like this one. Its a family favorite and have one in the oven as I type. Its very addicting.

Soft taco wraps of any flavor.

Spread ranch dressing down the center

put any meat on it. (we use deli meat from WalMart)

Such as Applewood Honey Ham, Sundried tomato Turkey, Sara Lee honey ham.

Anyways, after putting meat on there, add your favorite cheese, and wrap the bottom up first, then the sides.

You can either heat it in the microwave, or brown it in a skillet for a few minutes and flipping it once.

ALSO:

White Fish w/Caper Sauce

Tilapia is a mild-flavored, firm-fleshed whitefish. It can be rather bland. Perk up tilapia fish with spices and a tangy wine reduction lime caper sauce. If you cannot find tilapia, most other whitefish fillets will work as well such as catfish, trout, and snapper.

INGREDIENTS:

1/4 tsp garlic powder

1/2 tsp onion powder

1/2 tsp dill weed

1 tsp lemon pepper

1/4 cup grated Parmesan cheese

2 tsp mayonnaise

6 boneless tilapia fillets (Makes 6 servings)

Salt to taste

paprika

1 Tbsp olive oil

2 Tbsp butter, divided use

1 cup white wine or chicken broth

Juice of half a lime

1 Tbsp small capers

Chopped parsley and lime slices for garnish

PREPARATION:

Combine garlic powder, onion powder, dill weed, lemon pepper, and Parmesan cheese.

Using half of the mayonnaise, brush one side of each tilapia fillet.

Sprinkle with half of the spice mixture, then sprinkle lightly with paprika. Turn fillets over and repeat using the remainder of the mayonnaise and spice mixture.

Heat a large heavy skillet over medium heat until very hot, but not smoking. Add the olive oil and 1 tablespoon of the butter. Swirl to coat the bottom of the pan. Quickly fry tilapia on both sides until golden, turning only once. Remove fish to a platter and keep warm.

Carefully pour the wine into the hot pan. Boil for one minute, stirring to scrape up any browned bits from the bottom of the pan. Add lime juice and continue cooking over medium heat until sauce becomes syrupy and reduced to about 1/4 cup. Whisk in remaining 1 tablespoon of butter and capers.

Spoon sauce over warm tilapia and garnish with chopped parsley and lime slices.

chicken tenders! okay....go to the store and buy chicken breast tenders....the night before you cook them let them marinate in liquid smoke (you can find this in the ketchup isle i believe) and also brown sugar.

about 4 tbsp of the liquid smoke and maybe 2 of the brown sugar

when its almost time to start cooking your dinner...beat two eggs....and then take a chicken tender and dip it in so its fully cover in the egg yoke...then roll it in all purpose floor (do this with each one you're planning on cooking)

if you have a deep fryer perfect if not....in a pot pour about half way with vegetable oil and wait for it to be heated (it'll bubble only a little) then cook the chicken until golden brown...mmmm its so good. my bf ate like 12 chicken tenders. use dipping sauce like ranch or bbq or mustard for more flavor if you like

good side dishes...just get a plain simple box of velveta mac n cheese
something i make a lot is, ';chicken parmesean'; (sp) i just take boneless chicken pieces and put into a dish and pour a whole jar of spaghetti sauce (any kind) over the chicken and i bake it for 1 hour at 450 degrees ferenheit. before it is done i boil noodles to go with. and put parmesaen cheese over the top. its like spaghetti with chicken. and salad is really good with it,
Learn how to make soup.

Once you do you can make many different varieties.

Or check one of the on line sources like America's test kitchen

They always have easy and fun recipes.
Try making a fancy version of grilled cheese.

- bread

- american cheese

- maybe another type of cheese?

- cut up jalepenos

- add taco bell or mexican food sauce

- tomatoes, or anything else!

Also, try plain pasta. Go to the store and buy all different types of sauces. Just boil the pasta, and add a sauce. They have baked ziti sauce, penne vodka, meat sauce, anything!
Here are a couple of things that are extremely good but with very simple, few ingredients and short prep times.

1. Roasted Rosemary Potatoes

cut up 5 big potatoes after you wash them (big chunks like the size of a tea light. cut up one onion in big chunks as well.pour on some olive oil, enough to coat the potatoes without having a lot of oil left in the bottom, some oil in the bottom is okay. sprinkle 1 tsp salt over the potatoes and 1 tsp of pepper. tear the leaves off 3 sprigs of rosemary and put that in there.

mix it all up and put it in the oven on 425, covered, for 45 mins. if you can poke them with a fork and it feels tender like a baked potato from wendy's, they're ready, if not, to another 10 mins.

2. Mexican Cheese Dip

Crumble up and brown one 'log' of breakfast sausage. Cook that on Medium High. Drain the grease off. Add one large block of Velveeta cheese that you cut into chunks. Let all of that melt while stirring... Cook that on Medium until the cheese is melted. Add one can of Rotel, be sure to drain it first! Mix it all up and let him dip tostitos in it. Men love this!

3. Perfect Sunday Roast.

Buy one big roast. put it in a large roasting pan. Add 2 cans of cream of mushroom soup, 2 celery stalks cut up, 2 carrots cut up, 3 potatoes cut up, one onion cut up, one pack of lipton onion soup mix and 2 cans of water. cover this and put it in the over on 350 for 5 hours. it will be SO tender it falls apart. Everything is in one pot. you can put it on at lunchtime and it will be finished by dinner. He'll love this if he's a roast fan.

4. Grilled or Baked Chicken

Take boneless, skinless chicken breasts (3-4 of them) and pour in 1/2 cup olive oil, 1 tsp garlic salt, 1/2 tsp pepper, 2 TBSP cumin and let that sit, all mixed up in a bowl in the fridge, while you're getting the roasted potatoes ready. Put the chicken in the oven in a pan for about 20-30 mins. that will depend on how thick the chicken is. it's not going to hurt anything to cut into the chicken at the thickest part after 20 mins to see if it is cooked or not. Instead of the oven, you can put them on the grill. I'd do about 10 mins on each side.

These are all easy, hard to screw up recipes.
pp %26amp; j

Pay attention there are a lot of steps so be patient.

1.) get to sliced of brea

2.) on one slice put peanut butter

3.) on the other put jelly

4.) slap the two together

5.) Booya! you got your sammie!!
Try making spaghetti and meat sauce. There are so many variations that you can't screw it up, you can make it to taste. I use a pound of ground beef, cut an onion and cook it with the beef, then mix in a jar of tomato based pasta sauce. You can add mushrooms, green peppers, celery, and spices, just whatever you have that you think would be good in it. Sometimes I make it with a pizza theme, adding cubed pepperoni. YUM!

Cheap and cheerfyl (and simple) recipes for uni?

I'm off to uni in a few weeks and was just trying to get a collection of recipes to take with me. I was looking for simple things like, sliced potato, cheese and garlic, bunged in the oven for 30 mins, seeing how as that's a really nice meal type thing, that's sooo easy and isn't just beans on toast. Thanks for any helpCheap and cheerfyl (and simple) recipes for uni?

make yourself a nut trial mix for a snack, mix all your favorite nuts and smarties together with rasins and cranberries, its very healthy!

for food try making simple fish in the oven :) get the white fillet fish so you have no bones and get a ';shake and bake'; thing but for fish and put a little oil in your dish and your fish and leave it in for less then 30 mins and you got really yummy fish, and if you like go to your nearest safeway and buy a sauce for the fish, lemon butter dill is very yummy with this fish! good luck:)
the saviour of all students are stir-frys. easy to do, just get some meat, a load of different veg, some noodles and some soy sauce, fry it all up together and you have a very quick and pretty healthy meal.

Also what i did once a week was to make something big like a lasagna, cottage pie, moussaka. they are pretty easy to make, look in any cook book. have one portion there and then and put the rest in the fridge or freezer, then you have several ready meals only much cheaper and nicer than the bought ones.
Baked potatoes with various fillings;

tuna and sweetcorn

cheese and coleslaw

etc...

roasted vegetables (courgettes, peppers, fennel, leeks, carrots, garlic etc) add vegetables according to their cooking time then add crispy bacon and finish with grated cheese.

Pasta, cooked with added salad ingredients e.g. toms, cucumber, peppers, butter beans or kidney beans, tuna or cheese or egg or chicken etc.. makes a great meal and can be made in bulk to last a few days.

Try a pizza or bread base with tomato paste, cheese and toppings (like a pizza)

sausage casserole, made with a tin of baked beans and chopped tomatoes, onions, sausages, garlic, mixed herbs and served with bread or mashed pots.

I could go on .....

Good luck

Try to have a balanced diet; something of everything.
Not a direct answer but the BBC has a great selection of recipes for all sorts of occasions even for uni. Just type in some ingredients or let them inspire you.

http://www.bbc.co.uk/food/recipes/
Cottage pie (serves 4-6 portions)

拢1.50 worth minced beef (cheaper if you feel like it)

15p onion diced

20p carrotsliced

10p frozen peas (just a handful out of the bag in the freezer)

oxo cube

some gravy granules to thicken

mixed herbs if you feel like a proper chef

50p worth of potatoes

Peel potatoes and chop to regular sized chunks, place in pan of boiling water.

Soften onions over medium heat in frying pan with 2 teaspoons oil of your choice. Add beef, frying until brown. Add oxo cube, stir in well. Add carrots, cook for a few minutes. Add some boiling water (between half a pint to a pint depending on amount of ingredients thus far), peas and optional herbs, lower heat and let simmer for half an hour. Check thickness of mixture, if it needs thickening, add gravy granules to taste.

Mash potatoes with a little butter and milk.

Either eat as mince and mash because you're bored and hungry, or in a baking dish place a layer of the mince mixture, topped with the mashed potatoes. Grill for 10 minutes under a medium-high grill, or until top goes brown.

Might be old fashioned, but come February when the cold winds are blowing, it'll take the chill off.
This is TWO recipes in one, practically cooks itself and should cost less than 拢2. Less if you buy dried pulses. You will get portions for two hungry people or you can start on day one with the Bolognaise and then on day 2 adapt it so you have chilli on day two. It improves in flavour on day 2.

Bean Bolognaise AND Veg Chili

Cheats version:

1. Brown onions. add one tin of ratatouille and one tin of kidney beans ( or mixed pulses as per your choice )..maybe some tomato puree

then

for Bolognaise..

Add Italian herbs....cook for a bit ..serve with spaghetti

or

for Chilli

add chilli powder or chillies and cumin....cook for a bit..serve with rice.

The non cheat version of course is to use fresh chopped veg of choice instead of the tinned ratatouille - tomatoes, aubergine, capsicum, mushrooms zucchini..sweetcorn ( esp in the chilli ) ..whatever.
my son lived on supernoodle butty's for three years at umist
a pint of guiness and a bag of crisps.
This might sound nasty but it's really quite tasty, so easy and very cheap...

Make some pasta and drain. Stir in some baked beans and add lots of butter. Season with lots of black pepper and enjoy... straight from the saucepan to save on the washing up!!
You need to buy a book called 'How to Boil an egg' (Simple Cookery for one). It is by Jan Wilson who wrote it for her son going off to uni. Someone bought it for me when I went off to uni 18 years ago, and I still refer to the vegetable section for cooking times and prep instructions. It tells you all the basics, plus how to cook for special occasions e.g Sunday lunch, puddings.
but beans on toast is a student staple!!!

Anyway, heres some tips I used:

Tuna Pasta, but add in (insted of mayo) a tin of chopped tomatoes, (one per three people) a little salt and pepper- and herbs if your feeling flush, then diced onions (reds best, sping onions are better), chopped peppers, sliced corgettes, a squashed garlic clove per person eating the meal, and tomatoe puree, simmer for 20 mins and eat.

If you like a paticular sauce and cant afford it, try mixing a 250g amont of it with a tin of chopped tomatoes- obviously better if the sauce is tomato based or it'll taste odd- but different can also be good!

Eggy bread (great for nights after a few too many) take a slice or two of bread (and it can even be stale bread if you haven't any fresh) then butter and put on the side for a min, then fry an egg, some milk (200ml per person) and salt and pepper until it starts to bubble, then chuck in the bread and if you have any, a little cheese for taste. If you are feeling really posh, add in chopped peppers, onions and diced onions.

Omlete as above but with no bread. And dont stir it, turn it when it solidifies.

Cous cous is also great- you can mix anything with it, from prawns to beans (the ones without the sauce are best) to vegetables to even chopped up frankfurters. Then add in salt and pepper, place the (dry) mix into a bowl and make sure there is about an inch before the brim of the bowl and your cous cous, then boil the kettle, pur the boiled water over the cous cous and then cover the bowl with either cling film(if you got that kind of money) or a placte. Leave to settle for about 10 mins, then eat. Ketchup or mayo usually does justice to this meal!

Macoroni cheese is good also, and you can add in cut up veggies which can be boiled along with the pasta. Then add the cheese sauce (you will need a good delia smith recipy book for a decent recipy) you can add garlc or chilli for flavour, and for some extras to add in, try diced ham, (yes you can still do this if its the packet ham), parsly or sliced tomatoes and branston or HP sauce.

Also good are stews which is where you put everything into a pan or water (and you can use chopped tomatoes) and stock cube, and some steak pieces or bacon pieces -or both, and leave to simmer then eat with white rice.

Or grilled kebabs which is just vegies sliced into chunks (the veg being corgettes, peppers, aubegines which you will need to fry in a pan first, tomatoes and red onions- and garlic cloves) and then slice meat pieces or fish pieces then sprinkle with oil, and grill on 180 for about 30 mins, turning occasionally. You can serve these with pitta bread, brwon rice or sprinkle with grated cheese.

Also dont overlook, ratattoi (cant spell that!) spaggetti bolonaise, lasagne. stir fry (just buy the sauce, packet of sharwoods noodles and beanspouts and your away!) and the all favorite, cheese on toast. Add anything to it and herbs can also transform a meal, add tomatoes to cheese on toast and ham to beans on toast and even tuna to lasagne insted of mince, and you have new ideas.

My best advice? Delia Smith. The lady is a genius!
Chilli con carne

Fry one chopped onion and a portion of cheap minced beef, add 2 tablespoon of cumin, 1 teaspoon of chilli and 1 crushed clove of garlic. Fry some more, the add a tin of chopped tomatoes and salt to taste. Adjust to taste by adding more chilli or salt. Serve with a microwave jacket spud or white rice or oven chips!

I'm Allergic to EVERYTHING!! What are some good simple recipes?

I recently had an allergy test done and I am allergic to everything... Food wise here are the things I have to avoid:

    Soy

    Cow's Milk

    Wheat

    Corn

    Tree Nuts

    Eggs

I am a college student and working full time, so anything simple/quick is good. For the past couple weeks I have basically been eating a lot of Rice and chicken or fish. So anything with more flavor and variety is great! Thanks for your help!I'm Allergic to EVERYTHING!! What are some good simple recipes?
Sounds like you will need to skip most carbs, but you didn't mention potatos, so there's that, as well as rice, rice pasta might be okay, and oatmeal. If you can get around the egg issue, then you can substitute wheat flour with potato, oat, or rice flour and probably some others for your baked goods, and you will probably want to invest in a bread maker so you can make your own. Meats sound okay unless your allergy goes as far as to include the grains that the animal was fed...ugh! In fact, most meat substitutes would be bad because they are made with soy. Other proteins would be things like sunflower seeds, and maybe pistachios, etc. I don't know if that is a tree nut. If peanuts are okay, I would buy my own and pulse them up into my own homemade peanut butter to avoid anything unnecessary. You may be able to eat goat and sheep's cheese, and there are some lovely tasting ones out there.

Lots of fresh fruits and veggies for you. Goat's milk and dairy products. Looks like your food bills just went up, but your restaurant bills went down.

What I would do is check in with the owner of a health food store and introduce yourself as a new customer, and ask for a tour around their shop. Explain your situation. They tend to be very familiar with their inventory, a significant amount of their customers are going to be allergy sufferers like you, and they will be a good resource for you. This is a good place to get specialty flours, dairy items, and whole grain items, as well as supplements if your diet starts to lack certain nutrients due to your limits in choices. But you can shop for produce at the regular store, and it sounds like you will be eating a lot of fresh fruits and veggies. That's not a bad thing.

For what it's worth, I would also consider having your allergy tests redone, even if it is expensive, unless you can tell that by skipping certain foods, you obviously feel better and you know that this is the reason. Why? Because this is a big lifestyle change, and I would hate to stick to this kind of diet based on a doctor's mistake. I would also weigh the pros and cons of sticking to and cheating on. Are your symptoms so severe that you can't just reduce your intake? This would open up some choices that are on your restricted list, if you don't go overboard. Of course, this is up to you based on your allergy symptoms.

If you have severe allergies, get an Epi pen and carry it along with Benadryl everywhere you go.I'm Allergic to EVERYTHING!! What are some good simple recipes?
The best quick items would be pre-made hummus (in the deli section) or instant (in the health-food section) and veggies. Any sort of beans and bean dip or ready made guacamole would work too. My advice is go to a health food store and ask the sales clerk for pre-made or easy mix foods that are free of the allergen ingredients. You'll be surprised how much good stuff is out there!

You can either do a tuna melt - or do tuna and noodles- which is macaroni and cheese with tuna- Make sure you put the tuna in AFTER the mac and cheese is thoroughly mixed in- and then add a little garlic salt and lemon pepper and it's a simple, but pretty tasty meal and will fill you up.
I've always liked making tuna salad and putting crunched up potato chips in there lol call me weird but it tastes awesome!

I'm sorry to tell you this, but tuna IS meat.
I dislike tuna as a general rule, but this is pretty good:

cook some spaghetti noodles (or pene)

let them cool down, add the tuna, mayo (to taste), some cut up hardboiled eggs (only one or two) and some green olives cut into slices.

    serve cold.

Mmm, I just made this recipe (no meat today) and it is fun and interesting. I added chopped apples to the tuna salad.

Oh, and for those that felt otherwise, tuna is fish, which isn't considered ';meat'; by most standards. Vegans and various types of vegetarians choose to avoid one or all of the 3 categories of meat, poultry or fish. For religious purposes, fish and seafood are ok on non-meat days. Just an FYI.
