What can I make from Alaskan Pollock and Baby Carrots? Simple recipes please!?

I have noodles, rice, potatoes, spices. I just need a good recipe idea that uses those two ingredients.

Pollock with Potato Crust


4 Servings





1 lb Potatoes; peeled and cooked


1/4 c Butter


2 tb Light cream


1 Egg; beaten


1 1/2 lb Cod fillets


2 tb Dry white wine


2 ts Lemon juice


Salted water


2 tb Flour


1/2 lb Cooked shrimp


1/2 c Grated Gruyere cheese


Salt and Pepper to taste


1 tb Milk





In bowl, mix potatoes with 2 tb butter, cream and


egg; whip until fluffy.





Place fish in large fry pan with wine, lemon


juice, and enough salted water to barely cover.


Bring to a boil. Reduce heat and simmer 15


minutes. Carefully remove fish from pan; reserve


cooking liquid. Flake fish coarsley, removing any


skin.





Preheat oven to 450掳.





In saucepan, melt 2 tb butter. Stir in flour. Add


1 cup reserved cooking liquid; cook over medium


heat, stirring constantly, until sauce thickens.


Add shrimp and grated cheese; simmer until cheese


melts and shrimp is heated thoroughly. Season with


salt and pepper. Place fish in baking dish; add


enough sauce to moisten. Cover fish with whipped


potatoes. Brush potaoes with milk; bake for 30


minutes or till browned. Serve any remaining sauce


separately.





Baby Carrots


Clean and wash the carrots. Boil them in a little water to save the vitamins with some salt for about 20 minutes ( test after 15 and ad some white sugar ) Drain the Carrots and ad a little butter so the carrots will become shiny.What can I make from Alaskan Pollock and Baby Carrots? Put the fish and carrots in a baking dish. Sprinkle with lemon pepper, top with some butter and bake at 350 til fish is done. Serve this over rice or noodles.
Very simple: Foil Pouches!


Season the fish with desired spices. Wrap in a foil pouch by placing the fish in the middle of a large piece of foil. fold the top over several times the close, but not all the way to the fish. Fold the ends up as well to close completely. leave room for steam.


Do the same with the foil for the carrots, except use butter, and honey or brown sugar to season.


preheat oven 400, bake carrots for 20 minutes, add fish and bake for another 10-15 minutes, depending on thickness of fish. it is best to use a cookie sheet to catch any escaping juices.


Serve with rice or buttered noodles
