Atta(Wheat Flour)Ka Halwa





Ingredients:


1 cup Wheat Flour


1 cup Ghee (clearified butter)


1 cup Sugar


1/4 cup mixed dry fruits (Cahewnuts, Raisins %26amp; Almonds)


5 cups Water





Method:





Take a pan or kadhai. Heat ghee in a kadhai, when the ghee is heated add wheat flour. Stir the flour till it becomes golden brown and the fat starts leaving the sides.


Now, add water immediately followed by sugar. Continue to stir untill it turns into a thick paste like consistency.


Switch off the gas and garnish it with dry fruits.


Serve hot.





Wheat Flour Au Gratin





Ingredients:


4 cups milk


1/2cup wheat flour


1 tbsp. grated paneer (cottage cheese)


2 cups mixed vegetables (chopped, boiled)


1 onion finely chopped


1/2'; piece ginger grated


1 green chilli finely chopped


Salt to taste


Pepper to taste





Method:


Put wheat flour in a dry pan, put to heat.


Stir continuously, till aroma exudes.


Do not brown flour, empty and keep aside to cool.


Add chopped onion to same pan, stir and cook till transparent.


Add ginger, chillies, stir.


Add 3 cups milk, bring to a boil.


Mix flour in remaining milk, till smooth without lumps.


Add veggies to boiling milk, stir.


Add salt, pepper, floured milk.


Stir continuously till boiling resumes.


Simmer till thick, stirring continuously.


Adjust taste with salt and pepper.


When thick pour into a shallow casserole or baking dish.


Sprinkle cheese, allow to cool completely.


Bake in preheated oven at 200oC for 15 minutes.


Serve hot with wheatbread toasts, or ryebread chunks.





Wheat Flour Ladoo





Ingredients:


wheat flour - 1 cup


besan - 陆 cup


sugar - 陆 cup


sieves and powdered sugar - 陆 cup


melted ghee or dalda - 陆 tsp


chopped cashew nuts - 3 tsp


cardamom powder - 录 tsp


melted ghee - 陆 cup





Method:


Heat a pan and add the melted ghee or dalda.


Saute wheat flour and besan together.


Do not allow the colour of the flour to change.


When it is done, remove from fire and allow cooling.


Add powdered sugar and cardamom powder and mix well.


Melt 陆 cup sugar in a pan. Add 录 cup ghee in it.


Pour the content immediately on a greased flat vessel or bowl.


This syrup will become hard when cooled.


Grind it coarsely and add this to the prepared flour mixture.


Fry the cashew nuts and mix in the remaining 录 cup ghee.


Add this to the flour mixture and mix well.


Make small balls before it cools.





Wheat Flour Soup





Ingredients:


2 tbsp Wheat flour


1 tsp Ghee


Salt to taste


2 cups Water


Hot Milk (sweetened or plain)

Method:


Roast the flour to an aromatic golden brown on low flame in a heavy saucepan.


Stir continuously or the flour will burn.


When the flour is done, add water stirring continuously so that no lumps are formed.


Add more water if required. Bring to a boil.


Add the ghee and salt.


Simmer on low for 2-3 minutes. Stir frequently.


Pour into porridge bowl.


Serve piping hot with plain or sweetened hot milk to be mixed as desired.


Stir in some corn flakes or other cereal as desired.


Very good and easy to consume in fevers, coughs, inflammed throats and ulcers.

What you need





* two cups all-purpose flour (or whole-wheat flour, or a mixture of the two), sifted


* one teaspoon salt


* warm water


* cooking oil





What you do





* All ingredients should be allowed to come to room temperature if they have been in the refrigerator. Mix flour and salt in a bowl. Slowly mix in enough water to make a thick dough. Mix in one spoonful oil. Knead dough on a cool surface for a few minutes, adding a few spoonfuls of dry flour. Return dough to the bowl, cover with a clean cloth, and let it rest for thirty minutes.


* Lightly grease (with cooking oil) and pre-heat a skillet or griddle.


* Divide the dough into orange-sized balls. Flatten them into six-inch circles. Fry them in the skillet or griddle, turning once, until each side is golden brown and spotted.


* Cover the finished chapatis and place them in a warm oven until they are all done.


* Serve with butter, and any curry, soup, or stew.

ATTA is healthy and it is full of fibre. Basically ATTA is whole wheat flour.Prepare any thing you like using ATTA in place of refined flour for e.g. Bread,naan,cakes, cookies and even use it in soups in place of refined flour ,similarly prepare white sauce for gratins.





Reciepe for chocolate brownies using ATTA





Ingredients:-


1 cup ATTA, 1cup condensed milk, !/4 cup refined oil or butter,!/2 tsp soda-bi-carb, 1/4 tsp baking powder, 2 tasp coco powder, 2 tasp powdered sugar, few drops of vanilla,1/2 cup broken walnuts and 1/2 cup milk





Method:-Sieve all the dry ingredients and add rest of the ingredients. MIx well in one direction. Pour into a greased micro safe dish and micro hi for 5 min. or pour in an aluminium Cake mold (greased) and bake in convection mode at 200 degree centigrade for 35 min

Ingredients:-1/2 cup white butter, 1/2 cup castor sugar, 1/2 tsp baking powder, 1/2 cup chocolate chips, 1cup Healthy ATTA, 1-2 tasp milk if required to bind the dough





Method:-Take butter at room temperature and beat in one direction add sugar in small quantities and continue beating till it becomes light and fluffy. Sieve ATTA with baking powder and mix in the butter sugar mixture with light hands add milk if required to bind the dough.Add chocolate chips and roll in between plastic sheets.Cut with the help of biscuit cutter and place on a pregreased baking tray and bake in a preheated oven at 150 degree centigrade or in convection mode at 200 degree centigrade for 10-12 min.
