Need to cheer-up a friend.Need help. What are some fresh, simple recipes to brighten someone's day?
If they like fruit, I like to cut up watermelon, cantalope and honeydew together. Simple and delicious!Need help. What are some fresh, simple recipes to brighten someone's day?
You could bake some muffins or cupcakes or even a small cake, then decorate them with different colored icings and write on them, etc.





You can buy gel icing to write in or write out words using toppings like sprinkles, chocolate chips, nuts, etc.





You can also make your own icing and add food coloring or flavorings.








Heres a basic recipe for cake, muffins, and cupcakes -





BASIC HOMEMADE MIX FOR CAKE





8 c. (2 lbs.) sifted flour


2 c. Cannet white shortening


5 c. sugar


1/4 c. baking powder


4 tsp. salt





Into extremely large bowl turn half of the flour, add shortening, remaining flour, sugar, baking powder and salt. With a pastry blender cut in shortening until it is in fine particles and mixture looks crumbly. Store in airtight container in refrigerator up to 6 months. Makes 15 cups. (If self-rising flour is used, omit baking powder and salt.)





For that, you can add in chocolate baking powder to make it chocolate or add in fruits like strawberries or blueberries to make a fruity cake.








2 cups all-purpose flour


1 tablespoon baking powder


2 tablespoons granulated sugar


1 teaspoon salt


1 large egg


1 cup milk


1/2 cup vegetable oil





1. Sift together flour, baking powder, sugar, and salt into a bowl. Set aside.


2. In a small bowl, combine together egg, milk and oil, using a wire whisk. Add egg mixture at once to the dry ingredients. Stirring mixture only until the dry ingredients are moistened. The batter will be lumpy.


3. Spoon into prepared muffin tins, filling each cup half to two-thirds full.


4. Bake in 400*F oven for 15 to 20 minutes, or until golden brown. Remove from oven. Let cool completely on wire rack.





Makes 1 dozen muffins.








Same goes for muffins, you can make them any flavor by adding extracts or chocolate powder along with fruits or anythign else you want. Frosting or glaze is optional too.








Basic Cupcakes Recipe





* 1 cup milk


* 4 cups flour


* 5 teaspoons baking powder


* 2/3 cup butter


* 2 cups sugar


* 4 eggs

Instructions





1. Cream the butter and sugar.


2. Add the eggs well beaten, then the milk.


3. Add flour sifted with baking powder and stir thoroughly.


4. Bake in buttered and floured cup tins in a hot oven for about 25 minutes.








Once the cupcakes are completely cool, they can be covered with any kind of frosting or topping. Also, fruit, chocolate, sprinkles, etc. can be added to the cupcakes.








Whatever you do I'm sure will cheer your friend up, be sure to get creative. Hope that helps!
I usually make a fresh fruit smoothie, all sorts of fresh fruit with lots of colours and some milk, or ice cream...show the person all the good stuff in the blender and then make it...anticipation is the best part. If you have the Magic Bullet, it is perfect, but a blender works great. Great colours, great taste, good for you, sounds like what you are after.
Try this for a pick me up.i1bag of salad greens(your choice), some chopped red onion,1lb of cooked shrimp (26-31 count),cherry or grape tomatoes OR 1 large orange,peeled and the white pith(?) removed and a good poppy seed or balsamic vinaigrette to splash on the mix! Makes me smile all the time! Have at it.
Get some pretzel sticks and put olives,cherry tomatoes,cheese,and salami on them.Get a large plate and arrange them on it with grapes,and strawberries in the middle of it.Now chill some sparkling grape juice (or wine) and walk to their house and sit and chat.Use fancy glasses for real pampering.

Whatever you choose to make, be sure it has bright cheery colors. Color can affect your mood just the same as weather or aromas. Anything with different colored peppers in it (green, yellow, red...) is nice and fresh tasting, beautifully colorful, and healthy to boot. Try a stir-fry with chicken and peppers...it's nice and simple to make, super healthy, and light enough to not make an already ';down'; person feel heavy or full. Follow it with a dessert featuring berries (parfait, shortcake) keeping it light but still delicious.
Well, if your friend likes sardine...


smash sardine (in sauce) first mix mayonaise and voila!
